Pumpkin Muffins

My friend Heather just reminded me of a recipe I used to make all the time that is delicious and fairly healthy. It's also as simple as can be!

Pumpkin Muffins:

1 can 100% pure
pumpkin (not the pie filling)
1 box duncan heinz spice cake mix
1/2 cup of water

Mix together, which may take a while b/c of the thickness of the pumpkin
. Bake for 22-25 minutes at 350 F.

  2. It is so easy! I've also had friends apply different combinations of canned fruit and cake mix with good results. Cherry pie filling and chocolate cake is a particularly tasty (though way less healthy) combination, as I recall. :)
