Great articles! I made RB&R yesterday and really beans and rice is my favorite dinner. It's easy, it's cheap, it's healthy, and it tastes good! I also like your suggestion of white beans with kale; I often stir leafy greens into white beans and I like to make soup with red and white beans and kale. Yummy!
That soup sounds really good. I rarely mix beans- although I used to love it when I was a kid and my dad would make 9 bean soup (or 13 bean, or however many different kinds of dried beans he had) on the weekends.
I didn't know you were running today, although I suppose I could have guessed. We'll have to get together for a race sometime! I agree w/you about the Spillway - definitely one of my favorite races. And I think I'd really like a longer trail races, too. I think they may do some in Mississippi; if I find out I'll send you a link.
I would definitely be interested in doing a longer trail race in Mississippi! I'll leave my contact info in your comments so you can send me the links if you find them. :) There was a 4 miler in Baton Rouge earlier this summer that I skipped b/c I didn't have anyone to run with.
Rich wants us to go hiking in the Red Rock national park to the west of the city...but it's 113 out there during the day, and I just can't bring myself to do it. Maybe come October. :)
